Matcha Green Tea Recipes

I want to share with you a recipe for cupcakes, but not ordinary, but with a Japanese twist.

Being interested in Japanese cuisine, it is impossible to ignore amazing Japanese desserts. There are a lot of them in Japanese cuisine, but these Japanese green tea muffins are worth special attention.

Green tea Japanese muffins are steamed delicate, light and incredibly airy muffins. The combination of honey and green tea gives the cupcakes an incredibly mouth-watering aroma and unforgettable taste!

Cooking muffins will take you no more than 20 minutes, from the start of cooking to serving cupcakes to the table. This is an excellent breakfast option without any extra hassle or refreshments for tea for guests suddenly arriving. Give it a try!

Connect 1 large egg, 1 tbsp. l vegetable oil and beat well.

Add honey, yogurt and sugar and mix thoroughly.

Combine flour, baking powder and powdered green tea. I use matcha tea.

Sift the flour mixture, adding to the liquid components.

Mix thoroughly until smooth.

Embed paper cupcake molds in heat resistant. Add the dough.

Cupcakes increase in size, so try to fill out the form no more than half or 2/3 of the volume.

Place cupcakes in a double boiler or slow cooker. I cook muffins in a slow cooker in the “Steamer” mode.

Cupcakes can also be prepared in a pan. To do this, install a sieve or other appliance with holes in the pan suitable for steaming. Make sure that boiling water does not come into contact with it. Wrap the lid from the pan with a thin cloth or towel, so the condensation formed during cooking will settle on the towel, and not drain down onto the cupcakes. Set the muffin pan over boiling water and tightly cover the pan with a lid.

Cook muffins for a couple of 13-14 minutes. Readiness can be checked by sticking a wooden skewer into the cupcake. If the skewer comes out dry - the cupcakes are ready.

Green tea muffins are ready!

Hot muffins can be served immediately. Have a nice tea party!

Matcha Coffee

If you are used to starting the morning with a cup of coffee, you can diversify this daily ritual and add a little green tea to the cup.

Ingredients:

Cooking method:

  • Mix coffee and matcha,
  • Add hot water, mix,
  • Add sugar to taste.

Match Cupcake

In addition to a variety of drinks from the Match, you can prepare delicious sweets that will appeal to both children and adults. One of them is a delicious cupcake with green tea, which is distinguished by unusual color and taste for baking.

Ingredients:

  • Match 10 g
  • 4 eggs
  • Milk 50 ml
  • Vegetable oil 40 g,
  • Flour 70 g
  • Sugar 70 g.

Cooking method:

  • Separate the egg yolk from the protein and place in different bowls,
  • After adding 35 g of sugar to the yolk, mix well. Then add vegetable oil and milk and mix again,
  • Mix 70 g flour and 10 g Matcha. Then add this to the egg yolk bowl and mix,
  • Add 35 g of sugar to the egg white bowl and beat well until the mixture thickens,
  • Add about a third of the contents of the bowl of protein to the yolk bowl and mix,
  • Add the remaining protein mixture and mix again,
  • Pour the resulting mixture into a cupcake baking dish and place in the oven at 170 ℃ for 30 minutes,
  • After baking, wait until the mold has cooled, and then remove the cupcake.

Match Blanmange

Another popular recipe is Blanch Manche from the Match. Light low-calorie jelly is suitable even for those who follow a diet, and bring true pleasure.

Ingredients:

Cooking method:

  • Soak gelatin in water,
  • Whip the cream until frothy,
  • Heat the milk in a saucepan. Do not boil,
  • Add gelatin, sugar and Matcha to hot milk. Mix well
  • While cooling the bowl outside with ice or cold water, pour the mixture into it and mix,
  • Add the creamed cream to 5 and mix well,
  • Pour into a container and refrigerate.

Matcha Macaroon

In the past decade, French macaroon almond cakes have begun to be cooked in pastry shops around the world, and Japanese confectioners have gladly picked up on this trend. We offer you to please your loved ones with these confectionery.

Ingredients:

  • Match 5 g
  • Egg 1 pc.,
  • Icing sugar 30 g
  • Ground almonds 30 g
  • Sugar 30 g
  • Chocolate paste to taste,
  • Cream to taste.

Cooking method:

  • Cool egg white in the refrigerator a day before cooking.
  • Mix sugar, ground almonds and Matcha,
  • Add sugar to the egg white, whisk until shiny
  • Combine the protein and almond mass,
  • Stir until a viscous mixture is obtained. Put it in a pastry bag
  • Squeeze out 2.5 cm diameter circles on a baking sheet, leave for one hour to form a crust,
  • Preheat the oven to 200 ℃, then switch to 150 ℃ and place the pan for 3 minutes,
  • Lower the temperature to 130 ℃, bake another 8 minutes,
  • Add a layer between the halves to taste.

Matcha cheesecake

Another adaptation of the original European dish to Asian taste preferences is the Cheesecake from the Match. His recipe is quite simple, and as a result you will get a real delicacy, which can pleasantly surprise guests.

Ingredients:

  • Match 5 g
  • Egg 2 pcs.,
  • Cream cheese 200 g
  • Flour 30 g
  • Cream 200 g
  • Sugar 70 g.

Cooking method:

  • Preheat the oven to 180 ℃,
  • Stir in a bowl of cream and sugar,
  • Add the eggs to the bowl and mix,
  • Mix flour and Match. Then add the cream and mix.
  • Add to the mold and bake in the oven for 40 minutes at a temperature of 180 ℃.

Bagel match

Bagels with green tea are delicious and nutritious muffins that are easy to prepare and store for a long time. They can be taken to work and eat at lunch or served at a party.

Ingredients:

  • Match 15 g
  • Bread flour 250 g
  • Yeast 2 g
  • Salt 5 g
  • Hot water 160 ml,
  • Sugar 20 g.

Cooking method:

  • Dissolve 5 g of sugar in warm water. Then add yeast there,
  • Separately, mix the flour, Matcha and 15 g of sugar in a bowl and add to the mixture,
  • Stir for 20 minutes,
  • Divide the resulting mass into 8 equal parts, cover with a damp towel and let it brew for 10 minutes,
  • Roll out the resulting mass with a rolling pin and give it a donut shape,
  • Let stand for 30 minutes
  • Heat the water, add sugar or honey to it. Then scald the donuts on one side for about 40 seconds,
  • After removing water from the surface of the donuts, put them on a baking sheet and bake for 15 minutes at a temperature of 230 ℃.

Match Cookies

Sometimes between meals, you just want to drink tea with something tasty. For this purpose, cookies from the Match are best suited, which will decorate any table.

Ingredients:

  • Match 5 g
  • Egg 1 pc.,
  • Flour for cakes 100 g,
  • Butter 30 g
  • Sugar 50g

Cooking method:

  • Mix sugar and butter in a bowl,
  • Add egg white and mix again,
  • Separately mix flour for cakes and match,
  • Combine the protein mixture with flour and mix until smooth,
  • Roll the resulting mass into a sausage. Let it brew in the refrigerator for 30 minutes,
  • Cut the resulting mass into pieces, put them on a baking sheet and bake for 12 minutes at a temperature of 180 ℃.

The recipe “Cupcake and Kurd with matcha green tea”:

Beat eggs with brown Demerara sugar in a froth.

Add the zest and juice of half a lemon, the powder of matcha tea (you can add any natural color, for example, spinach or beetroot juice).

Add citrus essence, softened butter, cream. Mix baking powder with flour, sift into the dough. Knead well. Leave on for 10 minutes.

Baking dish (I have 8x17.5), cover with baking paper. Pour out the dough.
Bake in a preheated oven at 180 * 40-50 minutes or until tender. Willingness to check with a wooden skewer.

Cut off the zest from the lemon and squeeze the juice. Slightly warm the juice, dissolve the brown Mistral Demerara sugar in it.

Beat eggs lightly, add lemon juice with sugar and zest. Add matcha tea. Mix everything well. Strain the mixture through a fine sieve.

Boil in a water bath, stirring constantly, until thickened. In hot kurd add butter, mix well.

Cool slightly. Cover the Kurd with cling film so that it touches it. This will prevent the formation of a crust.
Chill in the refrigerator.
Before serving, I put the Kurd for 10 minutes in the freezer. Then it’s even tastier.

The cupcake is slightly sweet, with lemon acidity and a delicate taste of matcha tea. Combined with a refreshing, very cold kurd, also with citrus notes. On a hot summer day for me - one of the most delicious desserts.
